PRODUCT: Cultivar of durum wheat.

DESCRIPTION: Among the oldest Sicilian grains, it owes its name to its pointed tip which, as such, pierced the jute sacks that contained it. It is a grain that is very resistant to drought. The flour is yellow in color, due to the presence of carotenoids, and has a fine grain size.

PRODUCTION AREA: Sicily
CHARACTERISTICS: A less elastic and tenacious gluten which, although it reduces the yield in terms of baking ability, is at the same time less toxic for the human organism.
PACKAGING: Manual
USE Mainly suitable for BAKERY, but also excellent for PASTA and PIZZA.
